About This Drink
The Clover Club cocktail is named after the men’s club of the same name in Philadelphia, and the cocktail itself pre-dates the Prohibition era. The drink’s unique foamy head is attributed to the addition of egg white, which acts as an emulsifier. While egg white is an unusual ingredient for a cocktail, it adds a foam texture and volume to any cocktail.
